I often do my most creative stuff between 22:00 and 02:00 but bed eventually calls.

However, there are serious long-term health risks from being up after 23:00 every night.

I do it too.  It's 'quiet time'.  It also usually requires an edit for grammar in the morning :)

Night time is the only time I get to catch up on blog reading.  In fact it is part of my nightly ritual.  Like you I find my inspiration and the majority of my work getting done during "quite hours."  It seems that I get into the groove later in the night and pound out work.  Sometimes working late at night can prove to be a little more careless.  But I bet there a lots of people like us!
