I'm looking for input from all the SEOs on the value of adding spaces between seperators when listing out items in a title tag.  For instance "girls red/black socks" vs "girls red / black socks".  Is adding spaces just a waste of character space?

While I practice the latter methodology personally, I don't have any scientific evidence that comes anywhere close to proving that one approach works better than the other.

The only thing I can say is that using spaces is arguably a good idea from a usability perspective.

SEO-wise, I've not found it to make a difference.

I'm a fan of adding a space between the "/".  The only instance in which I won't add it is if it prevents me from fitting everything within the first 70 characters.

I like simple titles.
