Looks like Google's testing out different cached page formats as some versions show up without the cached date.

Is it related to pages in the Supplemental versus the Main index in any way, or older versions of pages cached and still accessible?

There was a time several years ago when dates went missing for a few weeks.  I can't remember the outcome, but seem to recall dates going missing when the Supplemental database was being flushed and refreshed with newer old data.
